And think about the opposite, about people who start eating certain foods, because new ingredients are introduced in their countries (think of the Columbian Exchange but also of the current globalization of the world’s cuisines) or because they are undergoing the nutrition transition, with all its negative and positive aspects.
Often, these are not completely separate categories, as they can each influence a person’s foodways in unpredictable and complex ways.
In this last assignment, please write about an aspect of food-related migrations that has caught your attention. Feel free to talk about your own experience with food-related migrations, if you want to do so.
